FRUIT CREAM COFFEE CAKE

TRY IT WITH PEAR OR ANY OTHER FRUIT!

4 eggs

3/4 cup sugar (200 ml)

1 cup sour cream (250 ml - soft cream and add 1 teaspoon vinegar and 1/4 teaspoon (1.2 m) salt)

1/4 teaspoon (1.2 m) baking soda

1 teaspoon (5 m) baking powder

1 l/2 cup (275 g) flour

1/4 teaspoon (1.2 m) salt

1/2 teaspoon (2.5 m) vanilla

1 apple (grind by hand or cut in very small pieces)

Beat eggs until light; add sugar and continue beating for 1 minute. Add sour cream. Add dry ingredients. Add vanilla.
Turn into buttered pan (bundt suggested for a great appearance).
Sprinkle with TOPPING (see below).
Bake at 190ºC for 35 minutes or until inserted knife comes out clean.
Serves 12.

3 Tablespoons (45 m) brown sugar

1 teaspoon (5 m) cinnamon

1 Tablespoon (15 m) soft butter or margarine

1/2 cup (125 m) finely chopped walnuts or sliced almonds
